6 Tips for Cooking Chorizo

Chorizo sausage is made from pork, with spices and seasonings that give it a red color. Chorizo brings great flavor to dishes and makes a versatile addition to your family's favorite recipes.  

Cooking chorizo sausage? Here are six tips: 

1. Chorizo Is Versatile

Cooking chorizo is easy to do- it is tasty when fried, baked, simmered, or added as a topping to a sandwich or pizza. This spicy and oily sausage has a lot of flavor and it renders quite a bit of fat when cooked. It is a great choice when making a sauce, as it brings a lot of seasoning and spice to the party! 

2. Skip the Seasonings

As mentioned, Mexican chorizo is spicy, typically with chili peppers, smoked paprika, garlic, and vinegar. Be wary of adding seasonings and spices to dishes featuring chorizo, as the flavors peak and become more pronounced when cooked. Wait until cooking is complete to finish seasoning your dish.  

3. Pair with Cheese

A rich, mellow cheese is the perfect pairing with spicy chorizo, and the two combined are perfect with simple proteins, over eggs or chicken, for example. Crispy fried chorizo makes a nice textural change on a soup, in a taco, or on top of a cheesy dip. It is common to enjoy crisp slices of chorizo with Manchego cheese and salty olives for a light appetizer.  

4. Fire Up the Grill

Another way to capture great texture and taste is to toss chorizo on the grill! Cook it over medium-low heat until it reaches an internal temperature of 160 degrees Fahrenheit. Turn the sausages frequently through the cooking process to ensure even cooking on all sides, which should take a total of around 20 minutes.  

5. Cured or Cooked

Remember that chorizo sausage is found in both cooked and cured varieties. Cooked chorizo usually has a dry texture and is sliced, like a stick of pepperoni. Semi-cured varieties are often best when boiled before cooking, to prevent them from drying out. Chorizo of all types needs some sort of cooking process to render out the oil that this sausage produces.  

6. Save the Oil

When you do cook your chorizo, make sure to save the ruby-red oil that renders from your sausage. It is an amazing oil for salad dressing, sprinkling on pizza, or cooking eggs. The smoky paprika gives the oil a great depth of flavor, and it can be drizzled over anything, including veggies and pasta.
